Ichiyaboshi (salted and dried overnight)
In Japan, people are really good at taking care of fish. Ichiyaboshi is a very good example. It is just simply salting fish and letting it dry over night. During the night the moisture get evaporated. At the same time, it also takes away any unwanted smell from raw fish. Umami in fish get concentrated as well. When you grill the fish, the taste is just phenomenal. The only seasoning is salt. Simple is the best.
